Nestled on vibrant Gertrude Street in Fitzroy, Luminar Cocina Mexicana honors the ancient culinary arts of Oaxaca. Our culinary foundation rests upon two sacred pillars: ancient heirloom corn nixtamalization on hand-carved volcanic stone mills, and slow-cooking over glowing native Australian ironbark and red gum embers.
From our 32-ingredient ceremonial Mole Negro to slow-braised lamb barbacoa wrapped in aromatic maguey leaves, every recipe celebrates biodiversity, fair trade partnerships with smallholder Mexican growers, and seasonal Victorian farm harvests.
